Fermentation is one of those processes we don't try to speed up. Our apple cider vinegar is traditionally fermented and bottled raw and unfiltered, with the mother still in the bottle. Use it in dressings, marinades and everyday cooking. Natural sediment is normal — that's the mother. Store in a cool, dry place away from direct sunlight.
